Ingredients:
- 1/2 cup rolled oats
- 1/2 cup coconut milk (unsweetened, or full-fat for creamier texture)
- 1/4 cup plain or vanilla yogurt (dairy or non-dairy)
- 1 tsp matcha powder
- 1 tsp chia seeds (optional, for extra fiber and texture)
- 1 tsp maple syrup, honey, or your favorite sweetener
- 1/4 tsp vanilla extract
- 2 tbsp shredded coconut (unsweetened, or lightly toasted for a nutty flavor)
Toppings:
- Fresh blueberries
- Extra shredded coconut
- Chia seeds
- A drizzle of coconut milk or honey (optional)
