Το αιθέριο έλαιο Γαρύφαλλο εκχυλίζεται συνήθως με απόσταξη ατμού από τα φύλλα, τους μίσχους και τους οφθαλμούς του δέντρου Eugenia caryophyllata, το οποίο είναι εγγενές στην Ινδονησία και τις νήσους Μαλάκα. Πρόκειται για ένα ισχυρό έλαιο με ζεστή, έντονη, πικάντικη μυρωδιά και πρέπει να χρησιμοποιείται πολύ αραιωμένο και με μεγάλη προσοχή στην αρωματοθεραπεία.

Το έλαιο γαρύφαλλου μπορεί να χρησιμοποιηθεί για να επουλώσει ή να καταπραΰνει την ακμή, τους μώλωπες, τα κοψίματα και τα εγκαύματα, τα έλκη στα πόδια και ως παυσίπονο για ρευματισμούς και αρθρίτιδα.
